Gourmet Sunday Brunch @ Cafe Biz, Traders Hotel

Last Sunday’s revisit to Café Biz was like an old friend reunion gathering. We have a lengthy chat with Ms. Helen Tan, the F&B manager of Traders Hotel and Ms. Ivy Yap, duty manager of Café Biz and it was an enriching experience for us as both have shared with us their passion for this industry.

Café Biz's Sunday Gourmet Brunch is from 12 noon to 4pm, ideal timing for a weekend gathering and chat with your old friends. Do not be misled by the term brunch as the selection they have is close to a dinner selection. At $45++, one gets to enjoy fresh air-flown Pacific oysters, Rainbow trout caviar, free-flow fresh fruits and vegetables juices, Roasted beef, Brazilian Churrasco and many more.

The spread is pretty much similar to dinner so these batch of photos will be on top of what you will see that the dinner buffet and do note that Café Biz's dinner buffet on Thursday to Sunday is their version of seafood night. Also, given that they are under the Shangri-la group, some of the selections are presented by the chefs from Shangri-la Hotel. Hence, there is no excuse for one to miss out the buffets Traders Hotel has to offer.

The savoury section contains about 12 dishes which includes 扣肉包 (Braised Pork Bun), lasagne, Braised broccoli with assorted mushroom and oyster sauce, grilled seafood with garlic butter, baked scallops and many more.

Apart from the savoury section, one would not miss out their pasta corner which presents homemade pasta with your choice of sauce; La-mian corner which is handmade spinach noodles with beef broth, chicken broth and various chefs' specialties sauce and the Oriental roast station where they bring the best of Chinese BBQ delights. This is also the section which includes butter naan, masala and tikkas.

The sushi bar offers about 6 varieties and the local favourite of Salmon Sashimi. This salad section also have smoked salmon with a range of cold salads such as beef salad and potato salad.

A similar concept to Carnivore, the chefs will walk around to serve diners freshly roasted meat. I must say that the roast lamb is worth a try as Yuan is usually put off by the mutton/lamb smell (i.e. 羊骚味) but this one has ample herbs to curb the smell.

The dessert bar offers a wide variety of desserts and shooters. Apart from the desserts shown in the picture, the dessert section is served with freshly made waffle served with blackberry compote and various choices of ice-cream. Chocolate fountain is an all-time favourite in buffets and the chocolate sauce is simply irresistible for its rich and velvety smooth texture.

What we enjoyed best about the desserts here is that they are quite mild and should be generally acceptable by most locals. As compared to certain buffets which I have been to, the desserts were either too sour or too sweet. It’s a pity that Café Biz does not have a coffee house to enjoy their cakes and desserts. For durian lovers, their durian pengat is a must-try and is consistent on both our visits.

We apologize for our lengthy introduction as we want to dispel the myth that Café Biz do not have ample spread for its buffet bar. No doubt less spread than its sister hotel Shangri-La “The Line” but decent to justify your pockets. The quality, the service and the consistency say it all.

Do note that the Sunday brunch selection is alot more than the Saturday brunch.

All about tarts @ Pâtisserie Glacé

Pâtisserie Glacé, a bakery that has caused a buzz among the blogging community is one place Japanese-style cakes or tarts lovers would not want to miss. Having read Ice's entry proclaiming their latest creation to be the Tart of 2009, do I need to explain further why I was at Chinatown on a Saturday afternoon?

The shop has gained its popularity fast after opening in November 2008 and though I have only reached at 1pm, Double Rare Cheese Mango, Strawberry mille-feuille and Strawberry Hills were already sold out and by the time we leave at 3pm, there were only Banana Chocolat, Maison, Strawberry Souffle, Banana mille-feuille, Opera and Mont Blanc left. So better call up and reserve your favourite slices of cakes to avoid disappointment.

Fromage Syun


Previously known as Fromage Blanc, Fromage Syun ($5.60) is a low-fat cheese tart. Despite having a discounted amount of calories, the taste of the tart sure deserves the praise. Unlike the other colourful creations of Pâtisserie Glacé, this tart has a humble white finish.

Yuan felt that fromage blanc shares a close resemblance to cream cheese while the base is cookie-like while I personally thought that this was a good combination of cheese, a cake-like layer on a crispy cookie base. In any form of description it adopts, it is a must-have for cheese tart lovers. However, Yuan would prefer to have this without the jam which I personally thought was negligible.

The other tart which Yuan will not miss out is the Rin Rin cheese tarts ($3.50) and this time, we have chosen the one with Canadian Maple Syrup. Yuan felt that it bears resemblance to eating Portuguese egg tarts except that instead of eggs, its cheese. For me, my bet is still the original one for a "cleaner" taste.

Apart from the fabulous tarts we had, we have decided to try the Swiss-roll style creation, Banana Chocolat ($4.00). But since it doesn't fall in the tart category, we have published our reviews in a new entry.

Banana Chocolat

Unlike conventional Swiss rolls which are basically cream and chiffon sponge, this adopts a crisp layer and a melt-in-your-mouth bitter chocolate sponge. With a slice of banana in the the centre of the cake, the amount of fresh cream is of the right amount and indeed as described, the dark bitter chocolate brings out the natural sweetness of the fruit.

I definitely enjoy this more than the Chocolate Renga I had previously. Yuan personally feel that rich chocolate mousse lover might be disappoint with this but ultimately taste is subjected to individual preference.

Chocolate Fondue at New York New York

Happened to drop by New York New York during the week for dinner and decided to try their chocolate fondue.

Apart from the small portion of chocolate, I must say that this fondue is really worth a try. Not the super duper rich sort, just the right concentration of dark chocolate. The down side is that they served us with soft love letters, hardened raisin cakes, etc. but in all, its value for $15++ given the chocolate.

I guess some readers might have realise my recent obsession with burgers hence I simply had to eat this. Very ordinary taste, beef patty comes apart easily and not as thick as the Prive one, hence I took an overhead shot. I must say that the pasta tasted better though Fen thought it was too creamy.

Le Grenier a Pain at Sembawang Shopping Centre

You will not miss this shopfront as you enter Sembawang Shopping Centre, a prominent 800 square feet bakery, sitting at the main entrance.

Opened in December 08, by a pastry lover, Ms. Ellis Noval attempts to bring in French pastries and bread to Singapore. To accommodate to the local flavours, the breads are stuffed with savoury favourites such as bacons, hams and chicken curry.

The other specialities are the bite-sized French pastries ranging from croissants, madeleines and caneles, that are sold by weight.

Traditional French pastries such as macarons and other cakes will not be missed out on their colourful display. According to the staff, French pastries are generally more colourful and sweeter so don't be surprised by the brightly coloured macarons and the sweet Carolines.

Apart from the cakes we had, we did try 3 of their breads, namely Champignons Jambon et Oeufs Focaccia (basically foccacia with mushroom, ham and egg), Fromage francais (cheese bread in short) and M. Chocolat Pain. The staff has advised to warm the Champignons Jambon et Oeufs Focaccia and Fromage francais in the oven before consumption.

Champignons Jambon et Oeufs Focaccia has a good layer of ham which goes pretty well with the hard bread while Fromage francais has a soft-chewy interior which compliments well with the tough exterior and chunks of cheese.

M. Chocolat Pain is also pretty hard with a crispy top and its chocolate chips emits a nice chocolately scent.

Overall, all 3 breads are worth a try but do keep in mind that their selection is a direct opposite of a conventional soft bun.

Carolines cake

Recommended by the article “Best in dough” on Business Times, 07 March 09, this is one cake to try if you have only limited room for desserts. Why so? One get to try their macaron shell, their Choux a la crème caramel (vanilla praline puff) and chocolate mousse.

Quoted from Business Times, this is a “sticky chewy chocolate mousse cake layered with chocolate and almond biscuits topped with caramelised profiteroles filled with vanilla praline cream imported from France”.

Yuan personally highlighted his liking for the caramel vanilla puff as the caramel gives the puff the additional crunch. The chocolate mousse is no doubt smooth and is comparable to most of the good chocolate mousse cakes which we have tried but on the sweeter side. The chocolate cake that is sandwiched between the chocolate mousse is springy and contrast pretty well with the mousse. The almond biscuit at the bottom of the cake were pretty ordinary and was soft like their tart base. Worth a try if you happen to be at Sembawang Shopping Centre.

Choux a la creme caramel

Macaron was the reason why we have decided to drop by Le Grenier but with limited flavours, we thought it was hard to pick 3 flavours given that we have a liking for floral flavours. Thus, we opted for the Choux a la crème caramel to lay our verdict on their macarons.

At a price of $7.90, one will expect 3 caramel macarons on hazelnut tart. The macaron shells lack the almond-y texture which most macarons will have. It is more to a soft biscuit with caramel filling. As for the hazelnut tart, the tart base and hazelnut mousse share similarity with their chocolate tart.

Chocoholics will be disappointed with this tart. Unlike the chocolate tarts (i.e. Prive, 2am, Laurent, 12+1 and Patisserie Dessert Couture), this tart barely contains chocolate.

We wouldn’t say this is bad, but rather it is a unique combination of hazelnut cream, a thin layer of milk chocolate, a cheesy curd-like mousse on a soft pastry base. We personally thought that locals may not be accustomed to such a combination.

Double Bay Australian Dining and Bar

I first heard of this place from Ice's blog and shortly after, I couldn't resist further after reading Sihan's blog about this place.

Named after Sydney’s most fashionable shopping and dining suburb, this stand-alone Australian-style restaurant is located at the back of Raffles City Shopping Mall (if one travels via the MRT).

Through the outside and the inside

Encapsulated in a glasshouse and located along Bras Brasah Road, one can enjoy "Alfresco dining" without having to tolerate Singapore's hot and humid weather. The use of high ceilings with cushioned seats provides a superb ambience for gatherings, dates and chillouts. In short, I have fallen in love with this place.

With a selection of seven types of fresh fish (e.g. sea bass, barramundi, red snapper, marble goby, etc) and three different coatings (breadcrumbs, beer batter, or sumac-and-coriander batter). One will be overwhelmed by the choices but a mini description of the texture of various species of fish makes it alot easier.

Chilean Sea Bass

Chilean Seabass ($26.90++), known to be firm, white, very rich, moist and flaky was actually both Yuan's and my choice of fish. Not choosing Double Bay's signature fish and chips style, Yuan firmly believe that ëxpensive" fish are meant to be served either pan-grilled or steamed to enjoy the maximum sweetness of the fish, hence he prefers to have his Seabass pan roasted with Hokkaido seaweed crust and served with potato mousseline and vine tomato coulis.

Being mildly cooked over the pan, the Seabass retains the moisture. Lightly marinated hence one will be able to enjoy the original freshness of Seabass. What’s worth mentioning is the mashed potato, it’s so smooth that I thought it was the sauce accompanying the Seabass . Definitely a must-try.

Fish & Chips among the 7 types of fish and 3 types of batter...

Since I have a liking for firm and rich fishy texture, I had the Barred cod (Grouper, $24.90++) with Sumac and corander batter. Yeah, their signature fish and chips. Served with chilli sauce, vinegar and tartar sauce with thick cut fries that adopt slight-crispy, lightly salted exterior with a fluffy interior. The batter is light but what amaze me is the tender fish in the batter. It taste as juicy as how pan-grilled fish are supposed to be. The most important thing about this fish and chips is that the batter does not retain the oil like others and has a slight pepperish taste and crispness.

Lemon Meringue Pie

We used to have bad impression of lemon meringue tart/pie as we thought it was suppose to be a combination of extreme sweetness and sharp lemony sourishness. My opinion starts to change after trying Aerins' (via Evan's recommendation) and I am ready for this dessert.

Lemon meringue pie ($8.90++), unlike the tart form we had previously, is flat like a pancake. The meringue that is directly on top the lemon filling is extremely fluffly and light. However, we thought that this layer was not torched sufficiently. The lemon curd filling was a pleasant surprise with it being smooth and slightly sour.

In short, we both agree that this gave a totally different perspective of the lemon meringue. Soft pastry skin rather than the crispy tart crust, not-so-sour lemon paste and creamy meringue. For those who dislike the sourness of lemon, this is a good reason to like a lemon meringue pie.

Lastly, nothing to rave about the ice-cream. Although the vanilla fragrance is sufficient, the ice-crystals present in the centre of the scoop was quite a let-down.

Molten Lava Cake

Chocolate, has always been an all-time favourite to many and chocolate lava cakes make no exception. Somehow or rather, just looking at the oozing chocolate "lava" flows out like magma thrills many or maybe it is the aroma of warm chocolate that does the trick.

Basic requirement for a good lava cake is a crispy layer with a generous molten core and this has definitely meet the requirements of both. In fact, this is one which I hope there is more cake content than molten chocolate.

What we both enjoyed about this warm chocolate cake ($11.90++) is its crispy outer layer without having the burnt taste. This cake, no doubt, is moist and fluffy but has a similar texture as a souffle. Particularly, Yuan felt that the "egg-y" taste is more distinctive than the burnt chocolate taste which some warm chocolate cakes have. For that, we generally prefer dark devotion from tcc and Soffiato from Ricciotti.

Riders Cafe

A café located within Saddle Club off Eng Neo Road. This is generally a members-only area except for the club and cafe which is open to public. This place offers a scenic view for those who like to see greenery and open fields (a rare sight in Singapore) but we would advise readers to either drive in or take a cab, walking in is seriously a bad idea which we have personally experienced.

Heard about the place being crowded and time constrain imposed on one of the bloggers, we have decided to drop by on a weekday to avoid any potential situations that might foul our dining experience.

Despite being a weekday morning, the place is not entirely empty and considering the amount of seating area this place has, I guess it must be popular to attract such high volume of crowd.

Like PS cafe @ Harding and Laurent @ Wessex, the place being so far away from the main road adopts a laidback atmosphere. Being in a cottage-like building on its own and surrounded by lush greenery, it is an understatement why this is such a popular brunch place. The occasional appearance of horses taking their morning exercise simply make our day and we couldn't help but to capture these moments on our camera.

Since Yuan had his breakfast earlier on, I could only order one breakfast, which is Eggs Benedict served with breakfast potatoes ($12++) and a cup of fruits. Alas, I have to give the morning pancakes a miss.

What we particularly liked about this is the bread, toasted with butter to achieve a slight-crispy outer layer. But Yuan specifically pointed out the excessive use of butter in the Hollandaise sauce thus overshadowing the taste of egg yolks. On the contrary, I am perfectly fine with the combination though I prefer more sauce. One thing that disappoints was that the poached eggs weren't drained properly and thus when I cut one of the poached eggs, the water started to flow out, soaking the bread beneath it.

Since the chocolate dessert, Death By Chocolate is widely mentioned in most blogs, I am curious about their strawberry shortcake ($10++) and to retain my mode of classification, the review can be found here.

This is one place that appears in almost all the blogs I have been reading and I simply cannot resist giving this place a miss.

Strawberry shortcake from Riders Cafe

Having tried a handful of Japanese-style strawberry shortcakes which uses sponge cake base and Chantilly cream. Riders cafe serves the American version. Fresh cream, custard served with butter cookie, strawberry and crunchy Caramel Crumbs.

Unlike the Japanese's Chantilly cream, the whipped cream served in this dessert has a certain degree of "weight" and one may reconsider finishing this dessert on your own. The bottom layer of custard provides a refreshing after-taste and the overall combination is good.

Overall, this is a very refreshing dessert, somewhat similar to eating yogurt with oatmeal.

Privé bakery café ~ The sun, breeze and surroundings...

I presume Privé is not unheard of among the foodies in Singapore. Comprising of a modern New York-style restaurant, an outdoor gastrobar and a bakery cafe, Privé, a stone's throw from Sentosa, is located on Singapore's first "private" island, Keppel Island. Don't worry if one don't drive, a short cab ride from Vivo City only costs less than $4.50 so don't miss out on this multi-concept waterfront dining experience.

With the yachts aligned neatly on the tranquil waters of Keppel Island and that the Caribbean clear in sight, the view is magnificent.

As the sun sets and candlelight glows, the place transforms into a charming waterfront venue with twinkling lights from Caribbean. With the occasional sea-breeze and the sound of the rippling water, I don't think I need to go on further to explain the scenery further.

Having said so much about the fancy bridge, yachts and Keppel's signature residential developments Caribbean at Keppel Bay, Privé bakery café is a place we will recommend for a lazy weekend.

As one can guess, this place offers a wide selection of freshly baked breads, pastries, sandwiches, fresh pies and milkshakes.

With the brightly-lit interior seating and the spacious exterior seating, the ambience offered by the place is beyond one's imagination, particularly when Singapore is such a congested and overpopulated place.

In some of the reviews I have come across the internet, people have mentioned about bad service, exorbitant pricing and mediocre quality of food but I beg to differ. In fact, this is one of my most memorable and pleasant dining experience over my blogging days and this place is more than just the waterfront and yachts.

The selection of pastries offered by the café is of a decent collection ranging from cakes, tarts and mousse. According to the staff, the popular choices are the rum and raisin cheesecake, hazelnut praline royale, chocolate tart and chocolate fudge cake. Seems there were only two of us, I have to resist ordering the entire array of desserts available for the day.

The Fabulous Prive Burger & French Fries with Truffle Oil

I have decided to come to this place after seeing the lovely photos of Keppel Bay and I chanced the recommendation of Prive's fries with truffle oil by one of her readers. No doubt the fries are crispy and crunchy with a nice hint of fragrance but it is expensive to pay $12 for a plate of fries ($10 for the fries and $2 for the truffle oil). A better bet would be the The Fabulous Prive Burger ($26). We had the patty medium well and Yuan felt that it is one of the best burgers he has eaten. Complements to the chef for getting the patty just the way we requested and that the burger bun is delicious on its own – lightly toasted & slightly sweet.
