Strawberry Shortcake from The Regent Singapore

I haven't been eating alot of cakes lately, apart from the few birthday cakes I had and it could be due to me fearing disappointments. Strawberry Shortcakes and Chocolate Fudge Cakes are often the safest bet in most cake shops and since my mum is not too big of a chocolate fan, the choice is clear.

Something To Go is one of the hotel bakeries I will consider to pick up a whole cake as the cakes are reasonably priced. A 500gm Strawberry Shortcake cost $28 while a 1kg one is sold at $55.

Would say that my family enjoyed the cake thoroughly and it is hard to find fault with a cake that has soft vanilla sponge and light fluffy chantilly cream. Moreover, for the price, there is reasonable chunks of fresh and refreshing strawberries, not forgetting the crunshed peanuts for a nostalgic touch.

P.S. Yuan did highlight that there is a slight buttery aftertaste in the cake sponge which he dreads of so he would prefer Hilton's Strawberry Shortcake or Chef Yamashita's version (He is currently at Flor Patisserie).

Strawberry Shortcake from Hilton Singapore

This cake caught my attention when I swing by Checkers Deli for a cake fix and this strawberry shortcake is only available in 1kg. This cake is sold at $80 with 10% discount for UOB cardholders.

This is easily the most beautiful and expensive strawberry shortcake we have ever come across. Topped with white chocolate and layered generously with strawberries, vanilla mousse and vanilla chantilly cream on a sponge base, this impressed all my 12 diners.

The vanilla-infused chantilly cream is so light and goes well with the refreshing mousse and fresh strawberries. Do note that unlike the regular Japanese-style strawberry shortcakes that are mainly sponge cake with chantilly cream, this version focus more on the vanilla mousse and hence may not appeal to people who prefers more cake content.

In our opinion, be it taste or presentation, this is something to consider for a special occassion.

Strawberry Napoleon

Came across several Napoleons (i.e. Flor Patisserie, Patisserie Tony Wong, Zoe Patisserie and Patisserie Glace) but most of the time, the puff pastry is thick to withstand the pastry cream from softening the pastry; or that the filling catches the bulk of the attention.

As for this one from Something To Go, the puff pastry is easily the thinnest we have come across so far.

Priced at $28 nett for a 500gm, this is available off the shelf and I would say the pastry remains light and crisp until the cake is cut (i.e. puff pastry became soggy after several minutes upon cutting). Custard is of the right viscosity, not cloying nor overly sweet and the strawberries make it a light and refreshing treat. From a 5-star hotel, the price is reasonable and is recommended provided you have people to finish everything in a go.

Gobi @ Suntec

GOBI, known for their petite desserts, have finally opened an outlet in Suntec City. Apart from the regular cakes, macarons and petite creations, this branch has released its very own savoury menu and in-house desserts.

Unlike the white finish in GOBI @ The Central, this place is classy in its layout and the addition of mirrors provide a comtemporary feel. The wooden panels on its wall, the choice of vintage tables and chairs provides a beautiful setting for a nice weekend dinner or a hangout for chill-out. Together with the painted glass decors on the ceiling, the entire set-up of the place somehow conveys the founder's idea of providing something exquisite and visually appealing to her customers.

As mentioned previously, this branch offers in-house desserts and the selection ranges from the regular soufflé, crème brulée, pancake , ice-cream, panna cotta, chocolate lava cake etc. The pricing is reasonable, given its location and presentation. Frankly speaking, this dessert menu is so appealing that I got to resort to eliminating my extra choices.

White Sesame Panna Cotta

Recommended by the staff to those who prefer desserts that are light, the white sesame panna cotta ($9++) is very unique. The initial bite is a regular sweet Italian cream but the lingering aftertaste is something very memorable. The fragrance from the white sesame. Served with vanilla ice-cream and profiteroles, the entire combination is light but green syrup may be sweet to some people's liking. Just based on how fast we finish this dessert, I will not hesitate to pop by GOBI for their other in-house desserts, particularly the Chocolate Igloo.

Strawberry Shortcake @ Gobi

Described to have a perfect blend of hi-soft genoise layered with cream chantilly and fresh strawberries, I have decided to have a slice of strawberry shortcake ($6.80++), given how much I have loved it in the past. Surprisingly, having ate Patisserie Glace's, this indeed disappoint. Apart from the sponge being alittle sweet on the liking, the cream is not fluffy.

Gobi's desserts are generally on the sweet side, and comparing the 2 slices of cakes with the panna cotta we had that evening, I would return for their main courses (some of reviews posted on HGW are quite positive) and their desserts.

P.S. I used to eat cakes blindly, not knowing the difficulty and effort to put up the dessert. Little did I realize, the chantilly cream is equally challenging. Apparently, there are 3 phases while whipping cream, namely soft peak, stiff peak and curd and each is just a difference of a few whisks. Not just that, the bowl has to be chilled and the bowl has to be free from the slightest contamination. I don't know about others, as I put in more entries for the blog, I start to pay attention to the little details placed in a single dessert and I would say, as I eat more, I treasure the ones I really like.

Strawberry Shortcake @ Canele

Having ate Kki's strawberry shortcake the previous evening, I can't help but to try Canele's strawberry shortcake to compare the difference.

Those who prefer cakes with "body" will like this one but for me, I prefer my strawberry shortcake to be lighter, be it the sponge or the cream.

Unlike Kki's version, the genoise adopted by Canele is drier with a coarser crumb and is soaked in syrup to moisten it. Cream seems to be richer in fats and hence isn't extremely light and fluffy like Kki's and Pâtisserie Glacé's.

Having tried so many strawberry shortcake in Singapore, I realize I have not eaten a traditional shortcake, apparently it should be somewhat like a scone, hence different from a sponge.

Strawberry Shortcake by Kki ケーキ

I am very surprised to be able to have this cake and many thanks to Ice for reserving the few slices of strawberry shortcakes (i.e. Kki don't make strawberry shortcake in slice anymore unless its whole cake order as they give priority to our mousse cakes).

When I first had Canele's strawberry shortcake, my impression of that was really bad. I simply couldn't understand why the sponge was dry and rough. It was only after communicating with some of my readers that makes me realize there is a distinct different between those made by Japanese confectionaries and patisseries.

Having eaten Patisserie Glace's and Kki's strawberry shortcake within a short time frame, I would say each has its strength, while Patisserie Glace's has a very light yet dense sponge, a distinct characteristics of a good Japanese sponge; Kki's sponge is slightly porous with resemblance of a soft genoise cake.

Since Patisserie Glacé is known to use only basic ingredients of egg, milk, flour and sugar with no baking powder, stabilisers and preservatives. It is natural that the sponge is slightly sweeter to get a moist and tender sponge. Kki's adopts a light and airy sponge, which is less sweet than a regular sponge cake.

As for cream, both are very close, apart from Kki's being slightly watery or thinner.

Frankly speaking, Yuan and I like both versions and I feel that there is no point figuring out which is better. At the end of the day, it still voice down to individual's preference and should you ask me about my favourite strawberry shortcake, it will be none other but Arinco King.

Strawberry Shortcake 苺ショー @ Pâtisserie Glacé

The Japanese Strawberry Shortcake is a favourite among most Singaporeans and hence a common candidate found in most cake shops in Singapore. With so many versions, the recent discussion in my cbox brought up the issue of how authentic the local strawberry shortcakes are in Singapore and one of the recommendations made was Chef Yamashita's Strawberry Shortcake 苺ショー ($4.80).

As described in Pâtisserie Glacé's website, this has been a standard in any de rigueur Japanese Cake Shop and the basic criteria lies in the freshness of the strawberries, the fresh cream used and how good the sponge cake is.

Till date, the most memorable strawberry shortcake I had was the one from Arinco King. Sad to say, the place has closed down since they are unable to cope with the demands after the opening of 3 stores in Japan. Indeed a waste, I must say.

To non-strawberry cake lovers, like Yuan, most strawberry shortcakes will be ordinary since it is a standard combination of cream and sponge and don't be surprised, the 4 leaves' version is good enough to satisfy him. For me, I am picky and having ate a couple lately, my brain starts to do the comparison to hunt for my favourite.

Before I continue, let me relate to my dad's recent experience in baking a sponge cake (that affects my thoughts towards this cake). For those who baked, to get a good sponge is not easy and somehow or rather emusifiers is a magical tool. They make the sponge even and soft. The same recipe without emusifier makes the sponge porous and dry. In a way, having to witness the difficulty of making a good sponge that makes me appreciate cakes even more.

Back to Chef Yamashita's Strawberry Shortcake; visual impression, the 2 layers of sponge is very even despite the layer of cream. Not exceedingly sweet with a soft but not porous sponge, the most important factor, they are not soaked. Cream is very light but lacks the "milky" and creamy taste Tampopo's has. So depending on your criteria, some may find this heavenly while other will find it average.

Personally, I will say this is definitely one of the better strawberry shortcakes I have encountered but to say this is my favourite, it lacks the x-factor that Arinco King has. Lastly, the cakes at Pâtisserie Glacé sell very fast and by 6pm, one will be surprised the shelf is close to empty. Don't forget to reserve a few slices should you pop by late.

No. 34, Strawberry Shortcake from Rive Gauche

Strawberry Shortcake

To define a good strawberry shortcake is very dependent on what one expects from it. I used to rave about Rive's strawberry shotcake as it is cheap (previously each slice cost $2.80 nett) until the price of each slice shot up to $5 nett.

I have previously tasted this together with the strawberry slice from Yamazaki (or Sun Moulin) and the difference isn't big. In fact, both are similar with 2 layers of butter sponge with fresh cream and strawberries as the filling.

Comparing this with BakerZin's strawberry shortcake, the difference lies in the chantilly cream, while the former uses mascarpone in its chantilly cream giving it a slight sticky feeling, Rive Gauche is lighter in taste and that the "butter" after-taste is not prominent in the sponge.

The more outstanding strawberry shortcakes in my humble opinion would be the ones stated below, for the specific characteristics highlighted
1. Canelé Pâtisserie Chocolaterie which uses génoise sponge for extra texture,
2. Arinco King which uses a chewy and springy sponge and
3. The Patissier which is so finely layered with a sugar dough base.

Pleasant surprise for Arinco King fans

More known for their salted caramel roll, Arinco King, has some pleasant surprises.

First, there is 50% discount for all items till 28th Feb 10, so Salted Caramel Roll is now priced at $9, Maccha Roll at $7.50. Do note that Vanilla Roll ($7.50) and sandcakes ($1.50) were sold out by I reached there at 8pm. Note that my sister visited Arinco King today and was told that 25th Feb 10 is the last day of promotion. Also all the items except the Salted Caramel Roll are sold out already.

Arinco King also launched a couple of new products such as the Strawberry Shortcake, which comes in 2 sizes, $20 for a large-sized cake as shown below; and 2 more flavours namely, the Chocolate Cake and Berry Lite Shortcake in smaller sizes (priced at $5).

Judging from my previous experiences with their sandcakes and salted caramel roll, Arinco King's vanilla sponge is uniquely springy and soft. Unlike the conventional chiffon which is porious, the vanilla sponge has a slight chewy texture. Its fluffy whipped cream with no use of egg yolks is pretty close to Tampopo's Scoop Cake.

Although the same vanilla sponge and whipped cream is used for their sandcakes, rolls and whole cakes, the main difference lies in how long the cream has in contact with sponge. Somehow or rather, refrigeration with the cream, make the sponge more moist and dense slightly wetter but yet springier than other Japanese cakes (i.e. Tampopo Deli, Yamazaki, Patisserie Glace).

Strawberry Cognac

My pre-birthday cake bought by Yuan. I was hinting him to avoid chocolate cakes and The Patissier is a good choice for unique non-chocolate cakes.

I was hoping for Affection, a combination of rose jelly, vanilla sponge and lychee chiboust but according to Yuan, The Patissier has downsized their cake menu due to the Christmas season so some of the flavours were not available for ordering.

In terms of design, I have to admit that The Patissier adopts unique shapes and are brightly coloured (for non-chocolate flavours) and this is no exception.

Taste-wise, this is an alternative to tiramisu given its use of cognac and mascarpone cheese. The overall combination is tangy, refreshing and light. No doubt, recommended in our opinion if you don't mind it being pricey ($40+ for 500gm, $76+ for 1kg).

Strawberry Tart @ The Line Shop

The Line Shop situated in Shangri-La Hotel provides a quiet and excellent environment for afternoon tea and its wide array of desserts will leave its customer spoiled for choice.

Apart from sliced cakes, this is one place Fen will recommended for birthday cakes due to its reasonable pricing and reputation.

Most of the 0.5kg cakes are priced at $24+ and one will be amazed by the selection offered. On our visit last Saturday, the entire shelf is filled with whole 0.5kg cakes ranging from The Line Shop's bestseller, the Chocolate Truffle; local favourite, the Durian Cake; fruity selection such as the Fruit Flan and Strawberry Pistachio Shortcake; the classic Blackforest and many more.

Arrays of bakes

For non-cake lovers, the array of muffins, doughnuts and tarts is bound to tempt any walk-in customers.

Strawberry Tart

This tart is a simple combination of a tart pastry base, custard and a generous toppings of berries. The Strawberry Tart pastry is slightly different from the usual tart base due to its ëgg-y taste", similar to eating egg rolls. To some, this taste maybe ordinary for its price tag, $6.75+ but for Fen, she likes it this way that she gobbled the entire tart on her own.

Whole tarts (500gm, Apple Crumble or Strawberry) are also available at $18+. There is no credit card discount but a 30% discount for whole cakes and 50% discount for sliced cakes after 6pm everyday.

Strawberry and Mango Cream

Apart from Simply Chocolate, Strawberry and Mango Cream is another bestseller. Pretty understandable as the combination of strawberries and mangoes wrapped between layers of chantilly cream and vanilla sponge makes it easily acceptable to most.

The pricing of the cake is at $40 (8") and $50 (9"); pretty reasonable to be shared among colleagues.

When I first had this cake with my colleagues, the impression gotten from all of them were postive. However, do note that this cake uses butter cake instead of the regular sponge and hence some may not like the buttery aftertaste of the cake. Apart from that, this cake scores a thumb ups from most of the people who has tried.

Yuan is one of the few that dislikes eating butter cake with fresh cream, thus he felt that Strawberry Shortcake from 4 Leaves was a better alternative.

I always find it difficult to make a recommendation as there is no such thing as the "best" cake since taste is preferential. This is one cake which is positive for me but negative for Yuan.

Pistachio Strawberry by Hilton

Pistachio Strawberry - $6.95 nett;

What caught my attention for this cake is the design. Comprising of strawberry jelly, almond sponge and vanilla bavarious, this cake does bear resemblance to CentrePs' Pisa and Nectarie's Pistachio White Chocolate

Just an introduction to vanilla bavarious, a quick internet search leads me to Vanilla Bavarois which is basically a mixture of milk, whipped cream, egg yolks, sugar and gelatine, thus explaining the jelly-like texture.

Like CentrePs' Pisa , this cake is refreshing with a coarse almond sponge. The overall combination is not sweet with a tint of sourishness and has a nice fragrance that lingers in the tongue. The only setback is the layer of raspberry jam which causes the cake to fall apart and when eaten on its own, it can be alittle sour.

This cake is also available as a whole @ $58.85 nett and UOB cardholders can enjoy a 15% off.

Strawberry Slice by Yamazaki

Strawberry Slice ($4.20);
Yamzaki's version of the Japanese strawberry shortcake served with fresh cream and layer of strawberries; the distinctive bit about this cake is the almond flakes at the side of the cake which makes it stand out from other strawberry shortcakes. However, the downside of this is the use of huge and gigantic strawberry chunks (unlike the Patissier), resulting in eating this cake in parts rather than as a whole. In short, the bulk of the cake is strawberries and not the fresh cream and chiffon cake.

A deconstructed cheesecake with a delectable mix of ice-cream, cream cheese, whipped cream, berries and crumble. Definitely doesn't taste like a typical cheesecake but its creamy texture with the crunchy crumble is a good twist from American cheesecakes. Personally, I thought it is pretty pricey, given its portion but interesting.

My personal favourite of Mezza 9 is the strawberry shortcake. At $4.50, its a steal. One entire strawberry with white chocolate carvings over vanilla cream and sponge. The sponge bears resemblence to those found in sugar rolls. Overall refreshing and should be well liked by most.

Strawberry shortcake

Strawberry shortcake ($6.00+) is another must-try. Instead of having chunks of strawberries or slices of it, the little bits of strawberries eliminate the sourishness which most strawberry shortcakes will have and one will be surprised by the fragrance of this cake. Furthermore, the bottom of the cake is a thin piece of sugar dough base which is crunchy and contrast extremely well with the alternating layers of strawberries and chiffon sponge layers. Did I miss out emphasizing on their light and refreshing Chantilly cream?

Strawberry shortcake from Riders Cafe

Having tried a handful of Japanese-style strawberry shortcakes which uses sponge cake base and Chantilly cream. Riders cafe serves the American version. Fresh cream, custard served with butter cookie, strawberry and crunchy Caramel Crumbs.

Strawberry Shortcake

Unlike the Japanese's Chantilly cream, the whipped cream served in this dessert has a certain degree of "weight" and one may reconsider finishing this dessert on your own. The bottom layer of custard provides a refreshing after-taste and the overall combination is good.

Overall, this is a very refreshing dessert, somewhat similar to eating yogurt with oatmeal.

A paradise of strawberries

If there is a prize for creativity for a particular ingredient, I would give it to Pâtisserie Glacé for the many versions of strawberry cakes. Not only they look lovely, they taste really good and refreshing.

Although souffle is often associated with egg whites, his version is a Japanese-style cheesecake which is light and fluffy. The strawberries are generously topped and not sour at all. According to Kay Boon, Strawberry Soufflé is popular among the local and Japanese customers.

The beauty of Japanese cakes is its light and refreshing taste and Pâtisserie Glacé pride themselves for not using any baking powder, stabilisers and preservatives. In addition, they ensure all cakes are sold by the end of the day by having a 20% discount for their cakes (not including whole cakes, organic cakes and promotion packs) from Mon to Fri after 5pm.

The Strawberry Soufflé is so smooth that my mum finds it hard to believe it is a cheesecake. Unlike conventional Japanese light cheesecakes which are sticky due to the addition of corn starch, Strawberry Soufflé is extremely light and fluffy but yet the taste of cream cheese is not compromised.

Strawberry Shortcake has a similar sponge like Sun Moulin's version, which is dense and springy but softer than the latter. As for its cream, it is not as light as Tampopo's Scoop cake and has a higher cream content than the strawberry shortcakes available in Rive Gauche and BakerZin.

Strawberry Hills, is one cake that will make me come back for more. Uniquely available at Pâtisserie Glacé (at least this is the first we have come across), this is a hybrid of tart and sponge cake with custard cream and fresh strawberries. The tart pastry is amazingly crunchy while the sponge cake is soft and springy.

I didn't get to try the Strawberry Mille-feuille since it was bought back home for my family. My sister finds it refreshing. The pastry sheets were crisp despite keeping in the fridge for a night but similarly to the strawberry shortcake, the cream is not as light as Rive Gauche and BakerZin.

The niche which Pâtisserie Glacé has is the use of almond powder which provides a different texture and fragrance from a conventional chiffon cake. Although it is not the softest cake I have tried, it is definitely something unique when different combinations of tart, cream, custard and strawberries are incoporated.

Anyway, my favourite among the entire lot is Strawberry Hills.

Strawberry Soufflé: Readers of the blog might have noticed that we have covered many desserts which called themselves souffle but they all look different. This one essentially is a light Japanese cheesecake. No fanciful flavouring, just strawberries on top.

Strawberry Hill: This is simply sponge cake on top of a tart with a thin layer of fresh cream. There is probably nothing special about the sponge and cream but the winner I guess would be the tart. Those who loved butter cookie will probably find the resemblance with the tart.

Tien-Tien from Centre Ps

I was browsing through Centre Ps's Les Entremets and my attention was immediately given to Tien-Tien. This delicate piece, carefully crafted and decorated by hand creation is so eye-catching...



As described on the web, this is basically Fresh Raspberry, Perfumed Lychee Cream and Rose Petal Mille Feuille. Sounds like a beautiful gift for a girl...

Each of these costs $9 nett and requires ordering at least 2 days in advance....

I really like this dessert. It is an alternative to the conventional Japanese Shortcake. Instead of strawberries, this is lined with whole raspberries and the best part is that, they are not sour...

The chantilly cream is light and is flavoured with Lychee, thus making it very refreshing. The amount of cream is little as the centre portion is a light sponge cake. At the bottom of Tien-Tien is a piece of pastry which is similar to a crunchy shortbread. This porous and crispy biscuit has a very nice vanilla and lychee fragrance. Of course they are pieces of white chocolate interlocking in between.

I would termed this as a must-try in my little database of cakes if you are a fan of strawberry shortcake. Particularly after a heavy dinner, this is refreshing and light. Something I won't hesitate to finish all on my own. Do take note that this is not available off the shelf and thus do place your order 2 days in advance.

The concept of this dessert is like the Ispahan. The difference is that the top layer is white chocolate with vanila sponge and the bottom is pastry similar to shortbread. I would say that this is not an easy dessert to eat, you can't really use a fork as the top and bottom layers are rather tough. To bite the whole thing may be a quite a mouthful. Although I liked their lychee buttercream but i guess i just didn't like the pastry at the base.
