Special edition on chocolate fudge cake

This entry will summarize the four big names of chocolate fudge cakes that are commonly mentioned in Singapore but do note that taste is a preferential topic and this should just be used as a reference.

Also note the date these specials are published as we are constantly trying new cakes so do look out for our entries on chocolate fudge cakes for newer updates and interesting finds.

Has the thickest and creamiest chocolate fudge and is naturally not sweet. The chocolate sponge in this cake is similar to the Mom’s choco fudge cake.

The oldest player when it comes to chocolate fudge cake but apparently many has claimed that the standard has dropped but the “AP” still stays.

The cake is the driest among the four with the highest cake content and thinnest amount of chocolate fudge.

Chocolate fudge has a jelly-like texture which does not melt like Choc.a.bloc. Chocolate sponge is not too sweet and the butter cream (used to decorate cake or write messages) has a unique after-taste which stirs childhood memories. A cake that was praised at all times, leaving a deep impression after the first bite.

66%, the chocolate ice-cream sundae

66%, which is chocolate ice cream with chocolate crumble and dark chocolate shards (S$8.00, excluding 7% GST and 10% service charge).

Pretty smooth chocolate ice-cream which is comparable to Hagan Dazs but Canele is better when it comes to presentation and the size of the ice-cream scoop. Served with 4 chocolate cookies with thin dark chocolate pieces which leads me wiping the plate clean... The only thing is that it is pretty heaty due to its high chocolate content. Tempts me to order 1 more ice-cream sundae.

Ice Cream 66% ($8): This Ice Cream has high chocolate content and yet has a smooth texture. You will feel a little heaty after eatting this. This chocolate ice cream has slight resemblence to the chocolate used in the Le Royale.

"Pass the salt?" at Canelé Pâtisserie Chocolaterie

Featured in The Straits Times, Urban (July 24 2008) under Posh Nosh, "Slices of Heaven", the Cafe Caramel from Canelé Pâtisserie Chocolaterie was introduced. As usual, that stirs my taste buds alittle... According to the article, the attraction of this cake is the combination of sweet and salty.



Anyway, selling at S$8.50 (excluding 7% GST and 10% service charge), this rich baby consists of milk chocolate coffee mousse, chocolate genoise with expresso, salty caramel and hazelnut feullitine.


I thought this cake is pretty interesting with the distinct taste in different layers. Frankly speaking, I enjoyed this better than the Roulade from BakerZin. Anyway, starting from the top,

  1. A thin layer of bittersweet dark chocolate with a thin slice of milk chocolate + the Canele name tag :D
  2. Chocolate coffee mousse which yuan loves it, smooth with the right amount of espresso
  3. Chocolate cake which I thought BakerZin fared better when it comes to their Chocolate Amer
  4. Chocolate coffee mousse
  5. Salted caramel, either you love it or you hate it... Intended pun whenever I typed this
  6. Chocolate cake
  7. Crunchy hazelnut base which can be found in Le Royale, simply yummy...

Cafe Caramel ($8.50): It has sort of a chewy texture, somewhat like the Jamacian Banana from NYDC and has this charred caramel taste. Probably the main attraction of this cake is the layer of hazelnut. I guess you may only like this cake if you like caramel.

Traditional Durian Mousse Cake from Cafe Vic

Vanilla chiffon sponge, sandwiched with 2 layers of durian mousse that still have traces of durian pulp is one cake that will send your taste buds flying. These cakes are so soft and the durian content is not as high and rich as the Durian Mousse Cake from Goodwood Park.

It is a lighter and softer version of Jane's durian cake, making it a wonderful dessert without you have to worry about being too heaty or a sore throat.

Some suggestions, if you like to enjoy durian in an unadorned manner like Yuan, consider the durian mousse cake from Goodwood Park. If you are a cake lover like me (Fen) and don't mind the durian taste, Cafe Vic from Carlton Hotel would be a better bet. Cafe Vic

Dining at Bobby's Rubino...

If you are looking for a dining place for a romantic night or a long-awaited gathering, Bobby Rubino's is one of the place to consider.


I won't comment much about the food since everything was fantastic. Just to let you know that they do serve iced water and citibank credit cards entitle a 15% discount.

For the appetizers, we ordered the breaded button mushrooms, really fresh and crispy breaded shells.


Calamari, not oily, not so teeth-taxing, fresh and addictive...


Salmon En Croute (S$33.90 + 7% GST + 10% service charge) - imported salmon which is so tender and fresh, wrapped in a thin and light filo pastry (similar to the apple strudel ones which don't flake off) , baked and served with delicate lemon butter sauce (which I thought was not enough to feel it).

The sides were seasonal vegetables, onion rings and garlic mashed potatoes.

Signature Baby Back Pork Ribs, The "Steel" City Rack (S$37.50 + 7% GST + 10% service charge) - imported pork ribs, cut from the tenderloin, flame-grilled and basted with signature bbq sauce...

It's good but Dan Ryan's is better in terms of tenderness and the degree of sweetness.

Mediterranean Lamb Skewers (S$28.90 + 7% GST + 10% service charge) - tender chunks of lamb marinated in red wine, garlic and herbs, grilled and served with roasted capsicums and mushrooms.

This is really good, they really mean tender, so tender it has the texture of a good steak.
Chocolate volcano (S$12 + 7% GST + 10% service charge) - warm rich chocolate brownie, vanilla ice-cream, chocolate mousse and whipped cream

This dessert is so sinful but if you love dense chocolate cake, this dessert is worth trying since it is dense, soft and sinfully rich with chocolate but if you are expecting a hard and crunchy brownie then you will be disappointed.

No.43. Chocolate fudge cake from Jane's Cake Station

Some may feel that the fudge is not chewy enough. I have to admit that it is not chocolately enough but if you recall my choc a bloc entry, high chocolate content results in the loss of texture (refering to Americano). The texture of the sponge is pretty similar to choc a bloc except that the fudge is more jelly-like than choc a bloc.


Frankly speaking, after trying all the 4 major players (Lana, Awfully, Jane's and Choc a bloc), apart from Lana having a slight rough texture and thinner fudge, I can't tell the difference in the cake sponges between the remaining 3. As for the chocolate fudge, Jane's is more to the jelly sort, Choc a bloc is more to the creamier sort, Awfully is in between the 2.

"Contrary to its dark, heavy and decadent appearance, this chocolate fudge cake is light. It melts in the mouth and is not cloyingly sweet."

No. 48. Banana Choco Fudge from Choc a bloc

Yuan: This cake is slightly softer. I guess most banana chocolate cakes have the tendency to sink when left outside the fridge. It has a thick layer of chocolate and a layer of banana at the bottom. Despite the amount of chocolate fudge, it is not sweet and they do not use sweet banana. I would say texture-wise it is good but it would be better sweeter.

Fen: Surprisingly, this cake is not very well-liked by my family. Maybe it has too much chocolate fudge, thus making the cake very soggy. My sisters found the texture too soft and wet that it tasted like porridge...

Personally, I thought it was not bad but having tried Lana, Awfully Chocolate and Jane's cake station, I realized I am not a fan of chocolate fudge cake. I thought it is not chocolately enough and thus, would very much prefer chocolate mousse than any of the above. In fact, the impression left behind by the Hazelnut Royaltime was so deep that I can imagine it melting in my mouth...

In short, the bananas are not very sweet and thus the banana taste is not very strong. Very soft and moist sponge and due to its not-so-sweet taste, it reminds me of the reduced sugar of Awfully Chocolate Cake (oh yes, they do allow a 5% reduction of sweetness).

According to the staff, Mom's Choco Fudge Cake, Crunchie Chocolate Fudge, Vermont Choco Fudge and Banana Choco Fudge have the same chocolate sponge which differs in its filling. Bottom line, if you have tried any of the above, you have indirectly tried 4 of their cakes.

Latest update: I brought this cake for my colleagues and they simply love it... What a way to kick start a Monday... Sugar rush!!! (Actually, in total there are 5, the 4th ones finds it better than Awfully Chocolate while the 5th... got to sms him first)

Americano Choco Fudge from Choc.a.bloc

I was debating between Americano Choco Truffle and Royale Choco Truffle but alas, guess I didn't have a choice as 3 days in advance was not enough to order the Royale Choco Truffle (apparently their order has maxed out for this cake on my preferred collection date) and I was lucky to get the Americano Choco Truffle due to the cancellation of one of the orders.

Yuan: For this cake, the lady at the shop advised me that the cake tasted better when it is a little warm. Initially i didn't thought too much about it but when we brought it home to slice, it really required some strength to slice it. (The cake was thawed for about an hour) I suggest that the reader may consider leaving it in the microwave or leave it to thaw for about 4 hours.

Anyway the overall feel of this cake is that it is somewhat like a brownie. The thing that i like about this cake was that it is dark chocolate and has a slight alcohol taste. However as readers may have observed, i generally prefer chocolate mousse and like my chocolate cake alittle sweet. Thus the texture and the non sweetness was not to my liking.

Fen: I liked this cake after microwaving it, tasted like the warm chocolate cake from BakerZin, although it is nice after it has been thawed from 3:20pm to 10:37pm. I guessed there is a compromise when it comes to chocolate content and the texture of the cake. Chocolate mousse wins hand down in terms of its threshold to have a higher cocoa content. Thus, having shared the 1st slice of Banana Choco Fudge and Americano Choco Fudge with Yuan and after which 2nd round of Americano Choco Fudge with Yuan after dinner and then 3rd round of Banana Choco Fudge and Americano Choco Fudge after I reached home... Sorry guys, I am sick of it and no more chocolate fudge cakes for me....

Anyway, there are 3 layers of brownie like chocolate sponge, sandwiched with bitter-sweet fudge (actually sweeter than Banana Choco Fudge) and a thin layer of nuts (only in the last layer of chocolate fudge).
