Flor Patisserie II

Flor Patisserie is one place that most would recommend for good Japanese cakes for Chef Yamashita prides on using the freshest and best quality ingredients in their pastries that have been sourced from overseas (Japan, Belgium, and France), and locally.

Every visit to Flor Patisserie has always been delightful for me as this patisserie has been constantly introducing newcomers on their shelf. Placing strong emphasis on using fruits as the main ingredients, the shelf is always filled with colour, making it a visual treat before we lay our hands on the cakes.

The only problem lies in them closing early at 7pm (from Monday to Saturday) and 6pm (on Sundays) so it can be hard for me to pick them up after work. As for weekends it would be a trip specially to Duxton Hill since there isn't any reasons to be in the vicinity.

The Vert

From the selection of cakes, one can expect that I am in the mood for Matcha and coming from a chef with over 20 years of Japanese baking techniques, and has spent a year and a half tailoring their cakes to suit the climate and local palette, you can roughly guess what I am going to write next.

A good green tea cake in my opinion is a rare gem in Singapore as it can be too mild in its flavour or the texture is horribly wrong. Vert ($6.50) from Flor Patisserie achieve this two aspect positively for a slight rough green tea sponge base, layered with a yummy-licious vanilla cream and green tea mousse. As an added bonus, the think layer of green tea layer has a slight chewy texture, mimicking the texture of a mochi.

Wakakusayama

Wakakusayama ($6.80), further emphasize the beauty of a good green tea sponge for its intense green tea flavour with a decent degree of softness. This swiss roll of honey-infused green tea sponge coupled green tea and red bean cream, is a real treat for green tea lovers.

Chocolate Pudding

However, when it comes to chocolate, somehow or rather, Japanese patisserie isn't our cup of tea for the chocolate is often weak to our liking. Hence, this chocolate pudding ($6.50) aught Yuan's attention more for its pudding which forms the lower layer and when eaten with the fresh cream and sponge, . Chocolate mousse was just average in his opinion.

Green Tea Mousse @ Orchard Cafe

Green Tea Mousse

There is no hard and fast rule when making a green tea dessert and so far, the pairing for green tea in various patisseries and hotels have been very different. With a bitterish after-taste and that incorporating into sponge may make the sponge dry and rough, it has always been a challenge to find a nice green tea cake and often most green tea desserts are disastrous.

For Orchard Hotel, Green Tea Mousse ($5.80+) is a unique combination of green tea sponge with mango jelly and the outcome is a refreshing treat. Just like most green tea cakes, the sponge is often dry but the hotel overcomes it by layering it with mango jelly which contrast very well and the mousse makes the overall relatively moist. In our humble opinion, we thought this is better than the hotel's signature Mango Cake.

Tofu Chiffon Organic Green Tea

Green Tea Chiffon is a recommendation made by one of my readers and this is something I didn't regret trying. Chiffon may be a common item in neighbourhood confectionaries but this is something very different. The texture is very springy and soft, unlike the common puffy ones (without volume body).

I have mentioned in my previous entry that Tampopo's chiffon is a class-different from the regular chiffon, I guessed I will have to retract my stand after this entry. Why so? First, the baked skin which is a must-have for chiffon cakes is very even and not burnt. Second, each bite is springy and moist with certain density, not just plain soft. Lastly, it is not overly sweet.

However, green tea lovers will find the cake mild to their liking. As for the tofu in this cake, the taste is not very distinctive, apart from Yuan mentioning that the cake has a strong taste of "eggs" (probably due to the protein content of tofu and not eggs) but I am not sure if this is the factor that contributes to the heavenly texture.

Note that this cake is not 100% vegan, as confirmed by Glace, they indeed use eggs in their tofu chiffons. This cake is available as a whole ($10.80) and I am not sure if this is sold in individual slices. On the day of my visit, I did see the orange chiffon sold in slices but not green tea. individual slices are sold at $1.80 each & flavors vary everyday.

Green Tea Opera

Green Tea Opera

It is hard to find a good Matcha cake as often this flavour is not easily accepted by most. Apart from Goodwood Park Hotel's White Chocolate and Green Tea Cake that wowed us the last time round. My vague impression of Green Tea Opera stretches 2 years ago and I recalled it being thinly layered with green tea sponge, azuki paste and green tea buttercream.

Just to be doubly sure that this is good, we dropped by Grand Hyatt on Wednesday but realized they no longer have this in sliced. The whole cake (400g) is available @ $18+, with a 15% off after 9:30pm (50% off for sliced cakes after 9:30pm).

Something to note, comparing this with the old version, there is a slight difference. Instead of red bean paste, they have replaced it with chocolate and whole red beans. Apart from that, the layers are generally similar, with alternating green tea powder, whipped cream, almond sponge, chocolate and whole red beans.

Yuan simply couldn't stop once he started on this cake. The combination of matcha, chocolate and almond sponge was heavenly to him. This is the rare few matcha cakes which you have a thick layer of matcha powder over the top. The only complaint is that the red bean does not seem to serve any purpose, the taste is overwhelmed by the matcha and it makes the cake more "grainy".

The macha content is not as strong as Breadtalk Silver. The winning point of this cake is the Japanese whipped cream - light and refreshing. However if you like it for the cream, the one from Tampopo Deli may be a better bet. For strong prefer strong matcha, Breadtalk Silver would be our preferred choice.

The custard filling in this bite-sized puffs is smooth and light as opposed to the conventional creamy and rich ones. The choux pastry is fluffy soft and since there is no icing sugar on it, this cream puff is not sweet.

Among the four, the most outstanding and recommended is the Cheese Manju. The outer skin of the pastry resembles the top baked layer of Hilton Cheesecake, providing a nice scent. With the cheese filling, we considered this to be a cheaper alternative to Hilton Cheesecake.


Dorayaki Red Bean is pretty ordinary except for a chunkier filling.

The Reikis have alternating layer of cream, ice-cream and cake sponge but since it is served frozen, the entire combination fails to stand out. Comparing the two, Reiki Milky is rather sweet and the top layer of cream tasted like condensed milk.

White Chocolate and Green Tea Cake

White Chocolate and Green Tea Cake is one of the newer creations of Goodwood Park and is available off the Deli shelf but on first come first serve basis. Selling at $7.50+ per slice, $30+ for a 6” and $48+ for an 8”, this cake bores pleasant surprise to green tea lovers.

A cross-cultural pairing of green tea mousse, white chocolate and vanilla sponge; the resulting effect is heavenly. The slight bitterness of the green tea mousse compliments the sweetness of the white chocolate nicely and the combination of vanilla sponge and mousse provides a moist, light and creamy texture all in a bite.

It is always difficult to present Matcha or Japanese green tea in the form of desserts for its complex characteristic, often grassy and bitter. But combining with classic flavours such as chocolate and vanilla makes it a different story.

Since white chocolate lacks the cocoa intensity, it is no surprise that the accompanying layers do not mask the flavor of matcha. Also, the introduction of white chocolate provides a creamier, more luxurious mouth feel to offset the bitterness of the green tea.

Note that there is a 50% discount for pastries and sliced cakes (except for durian goodies) from 8pm to 9pm daily.

Ochacha

Ochacha being a matcha concept cafe, served a variation of matcha-infused drinks and desserts. Being a variation of green tea, it is not surprising that its increasing popularity might be due to its high anti-oxidant content which is useful against cancer and aging.

Somehow or rather, this cafe is spacious with a combination of white and green. The addition of sofa seats just makes it an ideal place to unwind after work or relax after shopping.

This is definitely not my first visit to Ochacha but I have to admit that I didn't like the matcha latte and freezies served in Ochacha, probably due to its low milk content. However, my curiousity was stirred on their new drink, Matcha meltdown ($5.40+, introductory price). Interestingly, this is served with warm milk being poured over a couple of matcha (concentrate) ice-cubes. Like the right balance of milk and matcha and definitely refreshing for Singapore's hot weather.

My favourite dessert of Ochacha till date is the Panna Cotta ($3.90+) for its thick, velvetly smooth green-tea flavoured cream.

The Kyoto cheesecake is a lighter alternative for those who dislike those rich cheesecake.Tint matcha taste and a layer of sweet red bean paste over the top. Something worth looking out for.

Matcha Tea-rimisu

It has been ages since I have eaten Matcha cakes.

Decided to drop by Ochacha for a quick Matcha fix and I realize they have a new product, matcha tea-rimisu ($4.20+).

Matcha Tea-Ramisu

The nicest thing of this dessert is the green tea flavoured sugar sprinkled on top of the dessert but apart from that, it is relatively sweet. The mascarpone portion tasted like matcha whipped cream while the cake portion is alittle thin to bring out the differentiating layers.

Sun with Moon
will be a better bet when it comes to Matcha Tiramisu for its light and refreshing mascarpone layer.

Matcha Swiss Rolls from BreadTalk

Ever since I learnt that Evan got her inspiration from BreadTalk to make her Macha Roll Cake, I am curious about the taste of BreadTalk's swiss rolls.

Come to think about it, BreadTalk has been in Singapore for more than 8 years, since April 2000 and I can never forget the hype of their signature pork floss bread. However, that was not my favourite, I used to like their Otak bread, first introduced in the 3rd branch of BreadTalk (at the building just between Orchard Emerald and Centrepoint) which has a Peranakan theme, but cannot be found anymore. Sob.

I did eventually purchase the sliced green tea swiss rolls from their branch at Causeway Point and it is heavenly good. Since then, I will occassionally drop by BreadTalk to pick one up to reward myself during lunch (Each slice costs $1.30 and 5 slices of green tea, vanilla + raisins or chocolate costs $5.00).

Now the question is, BreadTalk Siiver has a whole green tea swiss roll which costs $19.90 per roll. Is there any difference from the sliced green tea swiss rolls purchased from BreadTalk and BreadTalk Silver?

There is indeed a difference between the 2 and I personally prefer the sliced ones from BreadTalk as there is lesser cream and the sponge cake is softer.

The green tea swiss roll from BreadTalk Silver has a much stronger Matcha taste, thereby slightly more bitter than the sliced ones. Nicely decorated whole swiss roll, filled generously with Matcha cream and whole red beans. The amount of cake is much lesser and is slightly harder when compared with the sliced ones. Also, the icing on top of the cake provides a slight crispy texture

The first time when I ate the Matcha Swiss Roll from Breadtalk, I instantly liked it for its dense sponge and mild matcha flavour. Hence I tried the Matcha Swiss Roll from Breadtalk silver. It turn out that this one from breadtalk silver is even better. The main difference is that they use matcha cream. Hence if you really love matcha, this one is a must try. Leave it to thaw a bit (It is left in the fridge at breadtalk silver) and you will find the cream taste like matcha ice cream. Not to forget the red bean that you will find in the cream. Verdict: Must try.

Matcha macarons from GOBI

Haven't come up with my Oct special despite knowing what to put on my favourite 4 (for Matcha) due to the lack of pictures. I am still short of one and thus I will drop by this weekend to pick up the dessert.



I have previously mentioned that GOBI's macarons are pretty strong in their flavours so Yuan and I find it hard to like it but till now, their matcha macarons still leave a very strong impression. Thus, I insist on going back to pick up these matcha macarons. Anyway, these marcarons are priced at $2.40 nett and will be slightly more expensive if a box is requested.

Fen's comments

Yuan and I have come to a common consensus that a good macaron must have at least one of the two factors, namely a chewy, not-so-sweet macaron shells which so far only Evan's and Centre Ps impressed us. The second factor lies its flavour which is basically how intense the flavour is in its filling.

In my previous entry, I have mentioned that GOBI's macaron shells are hollow, thus dent in the moment we pick up. Today, we ate it while it is still chilled and thus wasn't as bad as we have imagined them to be. Anyway, GOBI's macaron shells are not fantastic when compared to Evan's, Obolo and Centre Ps but I have to admit that their matcha macarons is one of the best in terms of flavour. You can really feel the matcha in its filling and I presume this is achieved by introducing matcha powder into the buttercream.

In addition, its matcha macarons has one of the better presentation and no doubt, I didn't regret my second visit.

P.S. 3 of these macarons is of the same price as Burger King Quad Stacker so be warned, these babies are expensive.

As mentioned in our previous entries, GOBI does not serve nice macarons except for one flavour which is the Matcha macaron. The matcha cream is so sweet smelling and coupe with the sweet almond taste from the shell, this baby is really good. Highly recommended if you like matcha macarons. However be warned that the other flavours may be rather disappointing.

Macha Roll Cake from Pâtisserie Dessert Couture

As mentioned in my previous entry, I simply cannot resist Evan's photos of her desserts and apart from her macarons, I have also ordered a macha roll cake from her. Based on the description of her website, this is a delicate macha sponge cake roll filled with either the choice of macha creme chantilly (sweetened whipped cream) or buttercream.


Aren't those little gumpaste flowers lovely. The colour of her macha roll cake is of such a lovely green and the chantilly cream just provides the contrast, making it so fresh and delicious.

It is always hard to find a good matcha cake as the balance between sweetness and the after-taste of green tea is difficult to achieve. Some are strong with the after-tea taste while others are mild and blended with chocolate, sweet potato, etc. I personally prefer green tea on its own and I thought even Azuki (Red bean) will overshadow green tea.

So far, I have only came across 3 green tea creations that is topped with whipped cream and that is the Matcha Chiffon from Tampopo Deli, Matcha Cotton from Ochacha and Evan's Macha Roll cake and I can dare say these 3 remains my favourite. Tampopo's Matcha Chiffon has the strongest green tea after-taste and due to its high green tea content, it has a slightly dense and wetter texture than the other 2. Ochacha's Matcha Cotton, on the other hand, is much milder and lighter in its texture... Evan's Macha Roll Cake happens to fall in between the two.

The beauty about Evan's creations is that it is home-baked and thus generally not sweet. I didn't regret my choice of buying macarons and macha roll cake from her as I was indeed craving for more. The simplicity of her macha roll cake is so lovely at sight and the soft and springy cake sponge with a slight after-taste of macha is simply addictive. However, I do find it alittle steep as it costs $8 per roll (8" in length) but do keep in mind that it is hand-baked and thus deserve a higher price than the bakes in confectionaries such as Bengawan Solo and Prima Deli. The same logic goes to Chinese New Year goodies when people are willing to pay 3 times more for home-bakes.

This is a very light chiffon cake with a tint of matcha smell. It is not too bad on its own however I found the cream in the center too thick.

Do you see the link between Bavaria and Green Tea?

Classified under the "Special" category,
Green Tea Bavarian ($5.50 excluding 7% GST)
has caught my attention ever since I first heard about this place last year. Patissier is frequently highlighted in blogs and particularly forums under the best cake thread.

This creation is basically a layer of flavoured chocolate sandwiched between green tea mousse with rum soaked raisins.

There is no standard combination for Matcha cakes and so far we have come across Azuki, Fresh cream, Sweet potato and Chestnut and the effect for all are so different. Green Tea Bavarian came with chocolate. Caught me by surprise as I thought it was Azuki and this is the first Matcha cake we have that contains alcohol.

The cake contains 6 layers, namely the
matcha jelly, the matcha mousse, the chocolate with rum soaked rasins, matcha cake, matcha mousse and matcha cake. I thought it would be perfect without the chocolate as the matcha components are good as a whole. The cake is soft enough, the mousse is creamy and overall it is not sweet nor overly bitter. When the chocolate tinted with alcohol is introduced, the effect becomes like a matcha-misu.

I would say I like it and it is definitely worth a try if you are a fan of matcha. The tea taste is not overly bitter.

This is the first Matcha cake which I have eaten which has chocolate and raisins soaked in rum. Personally not a fan of Matcha cake, I found this a very extreme combination. Each element has its unique taste and none over shadow the other. Hence you may wonder what exactly you are eating. However if you eat it layer by layer, you will find that the Matcha sponge and mousse is actually quite nice, soft and smooth. Despite the extreme combination, I must say that this Matcha cake is better than most which I have tried.

Green Tea Red Bean Creame

As mentioned, Matcha cakes are always an acquired taste, either you like it or you hate it. So far, apart from Matcha Chiffon from Tampopo Deli, I find it hard to like most of the Matcha cakes I have tried so far. When the cake is too sweet, it lacks the sense of green tea. On the contrary, if it is too bitter, I would rather prefer the tea itself.

The Atrium Deli, located at Pan Pacific Hotel, do have quite a selection of cakes, ranging from the common ones like chocolate opera, tiramisu to unique ones such as their signature passionfruit cheesecake and matcha opera or matcha red bean. Decided to stick to Yuan's choice since he somehow or rather knows my preference, I decided to pick this particular one.

This cake contains 3 layers of matcha ladyfingers with matcha buttercream and red bean paste. The buttercream is smooth with a generous serving of red bean. Not too sweet but I thought it has a banana after-taste, might be due to the essence they used. As for the strength of Matcha taste in this cake, this is considered the mildest of the entire lot I have tried.

Personally, I didn't quite like it but as what I always say, hotel cakes has never disappoint in terms of the texture of the cake. The only question is whether you like the combination or flavour. Anyway, each sliced of this Green Tea Red Bean costs $6.00 (excluding of 7% GST).

By the way, I thought they have a 5-inch gigantic Eclairs, but I didn't see it.

Time to detox...

Green tea has been a hype due to its anti-oxidants properties and now most of the pastries have been trending towards the incorporation of matcha powder. Earlier on, I have tried the matcha opera from Mezza9 and Ochacha. I would feel that having ate several various matcha desserts and pastries; the introduction of matcha into cakes generally leads to a denser and moist texture. This was observed very distinctly in Tampopo’s Matcha Chiffon.

This light tingling green sponge is not sweet at all and has a slight bitter taste. However, I simply fall in love with the green tea butter cream; refreshing and strong matcha fragrance. The assembly of the cake is neat with clean edges and the Azuki (red bean) sandwiched in between the matcha sponge provides a different texture which brings out of the matcha fragrance.


Oh, they don’t display many sliced cakes as the colour of green tea changes upon its exposure to light. I presume that is the process of oxidation.

绿茶与蕃薯 = Green Tea Sweet Potato

Nectarie le' Dessert Pâtisserie has a new creation and that is sweet potato with green tea ($7.50 nett, no 7% GST nor 10% service charge).

Fen's comments

Green tea, made solely with the leaves of Camellia sinensis, is the only hot tea I will ever drink. Don’t ask me why, maybe I am just picky since I don’t have a habit of drinking hot coffee and tea since young.

Matcha (抹茶, Matcha), on the other hand, is a fine, powdered green tea. For tea lovers, I guessed I am abusing these 2 terms but for simplicity, I just use these 2 terms interchangably.

Anyway, ever since I discovered my liking for green tea beverages (i.e. hot, iced and latte), I have started to pay alittle more attention for by-products of green tea. Having ate matcha chiffon from Tampopo, I am even more curious about finding cakes with Matcha. But as it goes along, I realized it is quite an acquired taste, I do regret at times on spending so much on them. First, they are pretty pricey and second, I always find it so hard to finish it due to the bitter and tea after-taste.

Subsequently, I found that different bakeries actually matchmake matcha with different flavours such as azuki, chestnut and sweet potato. Since I am not a fan of chestnut and sweet potato, I would say I didn’t enjoy this creation that much.

This green tea sweet potato has quite a thick chunk of sweet potato and I personally thought that sweet potato tastes better on its own, such as 摩摩喳喳 (bo bo cha cha), 甜薯汤 (Sweet potato soup) or even just steamed Sweet potato. Because it is processed in a dense manner to complement the cake, it kind of loses it fibrous sweet texture. However, I have to give credits to Nectarie for making such as nice Matcha fudge; it is soft and smooth, in a similar manner as pandan kaya. Lastly, I thought it would be better with thicker Matcha chiffon since the sweet potato portion is generally hard while chiffon is soft.

We have already tried many variations of the matcha cake. (Chiffon, mousse, azuki) I guess this comes to be one of the most unique combinations. Matcha with Sweet Potato. It is basically a layer of matcha fudge (somewhat like jelly), layer of sweet potato and layer of matcha chiffon. It gives the feeling like eating pandan kaya. (layer of pandan fudge and pandan sponge) However i somewhat feel that readers whom dislike sweet potato may not like this combination. As like the matcha mousse of canele, i guess this is one cake that is nice on the first bite, but you may find it a little difficult to finish this on your own.

Matcha from Canelé Pâtisserie Chocolaterie

Recommended by Redwine via our blog chat, we dropped by Canelé Pâtisserie Chocolaterie for our Matcha spree...

This cake with a simple name, Matcha is a delicate green tea mousse with chestnut cremeux layered with green tea biscuit and almond crumble.

When I sink my teeth to savour my bite on Matcha, it was a refreshing green tea mousse. In fact, this is my first encounter with Matcha mousse and I have to admit it is really smooth. As seen from the picture, it is make up of a 2 layers of green tea mousse, a green tea cake, chestnut cream and a shortbread like pastry at the bottom. The entire combination was lovely as each layer as a unique characteristic taste on its own.

However, when I attempt to finish this entire cake on my own, it falls into my category of haunting serving, it is so rich that I had some difficulty finishing it. The mousse is just too rich and I would appreciate this creation with a higher proportion of the Matcha cake. In fact, I missed the Matcha Chiffon from Tampopo Deli in which the cream content is not too high.

Oh, between the choice of chestnut and azuki (red bean), I think the latter will be a better bet due to its texture.

I would say it is worthwhile to try but do consider sharing it with others.

When i took my first bite of this cake, it was like wow. Lovely. This was the first time i ate Matcha mousse. Typically, it would be matcha chiffon, or matcha azuki but this is truely unique. However as i took more bites of this cake, i find that too much matcha mousse can be quite gross. Overall i would say it is worth a try but do try this with a friend as eating this whole mousse can be quite taunting.

Dancing the Cha Cha Cha with Matcha

After a spree of Tiramisu, now it is time to switch from coffee to tea. Yuan bought 2 cakes for namely the Matcha Azuki and the Matcha Cotton and they are pretty small till it the two of them are sitting comfortably in a paper bag.

This is the Matcha cotton which according to Ochacha is one of the more popular items and it costs S$2.90 excluding 7% GST.

Unwrapping the cake case...

Basically, this is a Matcha chiffon which is layered with fresh cream. It is pretty similar to the Matcha Chiffon from Tampopo except that the latter has a richer and denser matcha chiffon. However, none of my family members, including Yuan fancy this and I don't know why. I thought it is light and not too sweet for a dessert after heavy meals.

Matcha Azuki from Ochacha

After trying the green tea opera from Mezza9, I am kind of determined to try the different variation of Matcha cake. I thought Green tea is getting popular with all the hype of anti-oxidants and its ability to prevent cancer. However, very little places actually have Azuki (red beans) layered with Matcha sponge. At least for now, we have little clues about where to go.

Anyway, my impression of this cake is pretty much the same as several months ago when I first tried it. The texture is generally rough and dry so I don't fancy it even though the green tea taste is pretty decent. For your information, each slice costs S$4 (excluding of 7% GST).

I guess I have mixed feelings about commenting Matcha cakes since in the first place, they are rare and not everybody likes it.

Matcha Chiffon, recommended by Tampopo Deli

The Matcha Chiffon is a thumb up and is recommended by Tampopo Deli. The Matcha taste is really strong and the cake is soft with a slightly chewy texture (might be due to the introduction of Matcha). This is the winning factor as most of the Matcha cakes I have tried has a powdery after-taste. Though it cannot be seen from the photo, the centre cream is mixed with sliced strawberries, which I felt would be better if it is Azuki. The cream is the same as the Scoop cake but not as much so this cake won't make you feel so sin. This will scored a 8.5/10 for being the yummiest Matcha cake I have tasted so far.
