The moment Yuan saw the cross section, his instinct told him that it is not going to reach his expectation. The texture of the vanilla chiffon is pretty rough and hard. In fact, the hardest among all the cakes listed in this entry. I would say the texture will be a softer version of a finger sponge. As for the cream, it also has a pretty high milk content which is not light at all. Thus, this cake does not makes you lick the plate clean in comparison to the Scoop cake.
