Blackforest by Yamazaki

Yamazaki Boulangerie Chaude

A sister bakery to Sun Moulin @ Shaw Centre, Yamazaki Boulangerie Chaude has made its appearance in the East, at the new Tampines 1 mall. According to Tampines 1 website, Boulangerie Chaude means "hot bakery" in French and what is available in this bakery is pretty similar to Sun Moulin (e.g. Belgium waffles, Japanese snack cakes and English/French bread).

Strawberry creations

Since we are on the Blackforest spree, the entries for this bakery is predictable. Selling at $3.60 per slice. Yamazaki's version of Blackforest is pretty similar to most which consists of chocolate sponge with cherry filling and whipping cream. the end result is a combination of sweet and sour taste.
Black Forest

In our opinion, this Blackforest cake doesn't taste like the rest we have eaten. It is more like a chocolate chip cake whereby the kirsch-soaked cherries is pretty mild. What is more distinct is the chocolate shavings with whipping cream. Two sides of the coin, to compare with Laurent's and Mezza9, there is some lacking in this cake; to compare with old-school bakery, it definitely stands out from the majority.

Mixed Fruits by Yamazaki

Mixed Fruits Cake

Mixed Fruits ($3.60);
Basically, this is pretty similar to the strawberry slice but served with fruit cocktail. Unlike the strawberry slice, this cake fared much better than the former for its thinner bit of fruits, thereby allowing the cream and chiffon to stand out better.

Strawberry Slice by Yamazaki

Strawberry Slice

Strawberry Slice ($4.20);
Yamzaki's version of the Japanese strawberry shortcake served with fresh cream and layer of strawberries; the distinctive bit about this cake is the almond flakes at the side of the cake which makes it stand out from other strawberry shortcakes. However, the downside of this is the use of huge and gigantic strawberry chunks (unlike the Patissier), resulting in eating this cake in parts rather than as a whole. In short, the bulk of the cake is strawberries and not the fresh cream and chiffon cake.

Belgium Waffle by Yamazaki

Belgium Waffles

Belgium waffle ($1.50 each);

With a choice of either served plain or with chocolate drizzle, Belgium waffles (also known as Liège waffle) are made from dough rather than batter, thus results in a springy cake-like texture. When eaten hot, it has a nice sugary crisp and when served cold, the texture will be more to a dense waffle.

Time to detox...

Green tea has been a hype due to its anti-oxidants properties and now most of the pastries have been trending towards the incorporation of matcha powder. Earlier on, I have tried the matcha opera from Mezza9 and Ochacha. I would feel that having ate several various matcha desserts and pastries; the introduction of matcha into cakes generally leads to a denser and moist texture. This was observed very distinctly in Tampopo’s Matcha Chiffon.

This light tingling green sponge is not sweet at all and has a slight bitter taste. However, I simply fall in love with the green tea butter cream; refreshing and strong matcha fragrance. The assembly of the cake is neat with clean edges and the Azuki (red bean) sandwiched in between the matcha sponge provides a different texture which brings out of the matcha fragrance.


Oh, they don’t display many sliced cakes as the colour of green tea changes upon its exposure to light. I presume that is the process of oxidation.
