This is pretty unique for a souffle. Apart from the conventional fluffy egg white base, this souffle has a tint of salty miso. What makes it nice is really the burnt sugar at the base of the souffle, adding some sweetness to salty miso. A good alternative to a regular souffle.

Wow..this is the 1st time i heard of red miso souffle. Is their souffle better than bakerzin?
Red MISO souffle! sounds interestingly good... i must go try it one day =p
Sistafood: The souffle is well-risen but is too moist to my liking. Closer to the bubbly texture than the fluffy sort. The Bailey's Irish Cream souffle @ BakerZin is also wet due to the alcohol content so I thought the Chocolate souffle @ BakerZin is better than 1 Caramel's.
But that is strictly based on texture, the uniqueness of this souffle lies in the salty hint of miso within the crispy crust.
Elaine: Apparently, this is one of the signature of 1 Caramel's. Worth a try if you want something different from a regular sweet souffle.
Yes, I've tried both and i prefered the chocolate souffle. Bailey's souffle like you said if too wet. And i prefer to eat souffle with ice-cream!haha
Souffle is nice with ice-cream but the red miso souffle tasted funny with the yuzu ice-cream... Maybe that is what 1 Caramel wants to give, an infusion of saltiness, sweetness and sourishness...
